Homemade burger buns are a "must", at least I think so....
The burger hype has been going on for a few years now, and rightly so in my opinion. A juicy patty of meat or vegetables between two warm, soft and fragrant bread halves - a dream.
In between fresh tomatoes, onions, lettuce and cheese... I'm working up quite an appetite. My burger bun recipe is simple and you can conveniently freeze the buns so you always have some on hand when the burger craving hits.
Ingredients for 4-6 buns:
- 430 gr 550 wheat flour
- 1 packet dry yeast
- 40 gr sugar
- 1 tsp salt
- 1 egg, 1 egg yolk (you will need the remaining egg white later)
- 175 ml buttermilk, lukewarm
- 25 gr butter, lukewarm
- food colouring, optional
- dried herbs, optional
- 2 tbsp sesame seeds (here black sesame seeds) for sprinkling
Preparation:
First, activate the dry yeast. Mix it with 20 ml cold water and let it rest for 10 minutes. In the meantime, mix the flour with the sugar, salt and any herbs used.
Now stir the yeast well with a small spoon and add it to the flour mixture. Also add the eggs, butter and lukewarm buttermilk (and food colouring powder). Knead everything quickly into a smooth, supple dough (you can also use a food processor).
Place the finished dough in an oiled bowl and cover well with cling film.
Leave to rise in a warm place for at least 4 hours. Then divide the dough (without kneading again!) into 4 or more pieces and carefully shape into balls. The dough should be worked as little as possible. Place the dough balls on a baking tray lined with baking paper and cover loosely with cling film. Now the burger buns must rise again for 30 min - 1 h. Their volume should increase noticeably. Their volume should increase noticeably.
Now heat the oven (convection) to 190°C. Carefully remove the foil from the buns. Then beat the remaining egg white with a fork and brush the buns with it using a pastry brush. Now you can sprinkle the buns with sesame seeds, black sesame seeds (see photo) or with poppy seeds, sunflower seeds, etc.
Put the buns in the oven for approx. 20 - 25 min. and bake until golden brown. After removing, cover with a fresh, dry sheet (kitchen towel) and let rest briefly.
To freeze, allow the buns to cool completely and place in a freezer bag in the freezer. To use, heat the oven to about 120 degrees and bake slowly. Keep checking, don't let the buns get too dry.
The next burger evening can come, you are ready!
