This rich cheesecake is quick to whip up and extra moist to boot!
I love cheesecake of all kinds - but the version with quark instead of cream cheese has grown especially close to my heart because of its juiciness. It's also not as heavy as its American "cream cheese" sister, so you can easily eat two pieces.
I also like the fact that you only need a large mixing bowl and a whisk to mix the cake batter. The recipe also works without berries, of course, and this cheesecake is a real classic on its own, with its subtly tart curd flavour.
Ingredients for the pastry (26 cm Ø springform pan):
- 200 gr flour
- 70 gr sugar
- 120 gr melted butter
- pinch of salt
Ingredients for the cheesecake filling:
- 1 kg low-fat quark (20 % fat)
- 220 gr melted butter
- 200 gr sugar
- 5 eggs
- 1 packet of vanilla custard powder
- 250 gr fresh berries + 150 gr for the topping
Preparation:
First of all, you can melt the butter (for the dough and for the filling) in a small saucepan.
In a large mixing bowl, knead the flour, sugar and pinch of salt with 120 ml of the melted butter by hand to a crumbly dough (like crumbles).
Pour the crumbs into a prepared springform pan and press down by hand. Make sure that you form a small rim (height approx. 2cm).
Then, in the same bowl, whisk the quark with the remaining butter, eggs, sugar and custard powder until smooth. If you are using berries, only add them when the cream is completely smooth. It is best to carefully fold in the berries with a dough scraper.
Now tip the cream onto the pastry base and place in an oven preheated to 170 degrees Celsius. The cake needs about 50-60 minutes. It is ready as soon as it starts to bulge and the edges turn golden brown.
If cracks appear in the cake during baking, this is normal. Simply leave the finished cheesecake with tin on a cooling rack to cool completely.
The cracks will then shrink again.
In the meantime, for extra berry joy, you can boil the rest of the berries briefly with
1-2 tbsp. preserving sugar and bring to the boil. Spoon the cooled berry compote onto the cake pieces and serve.
