A real treat for the palate - the perfect combination of white asparagus and beef fillet.
This dish has been part of my menu for a very long time - during the asparagus season, of course.
Ingredients for 4 people:
- 300 gr fillet of beef
- 600 gr white, rather thick asparagus
- 1 vegetable onion
- spring onion
- 1 clove garlic, 1 cm ginger root, both finely grated
- 2 tbsp sesame oil
- 2 - 3 tbsp soy sauce
- 1 tsp gochujang paste
- 1 tbsp lemon juice
- 1 tbsp sugar
- Gochugaru (Korean chilli powder), for sprinkling
- fresh coriander, optional
Preparation:
First peel the asparagus and wash it thoroughly. Then cut the asparagus into narrow, diagonal pieces about 1 cm thick.
Now cut the onion (it should really be a mild vegetable onion) into coarser pieces and the spring onion into fine rings.
The dish is ready within 15 minutes. So you should already take care of the rice and also prepare the coriander (if desired) and the Gochugaru.
Now the fillet of beef is missing: cut it into fine, elongated strips.
Heat the oil in a wok or other wok-like pan and fry the beef fillet strips briefly (approx. 2 min). Remove from the wok and immediately fry the onions, garlic and ginger briefly. Then add the asparagus and pour the sugar over the vegetables. Fry everything well over a high heat, stirring constantly.
After about 4 minutes, add the meat again and deglaze with the soy sauce.
Immediately stir in the Gochujang paste and the lemon juice and season to taste.
Simmer everything over a medium heat for approx. 4 min so that all the flavours can combine well. Finally, stir in 1/2 tbsp gochugaru powder, depending on taste, and optionally the coriander. Season again with salt or soy sauce, depending on the amount of salt needed and the seasoning of the soy sauce.
Serve immediately hot with rice. Fresh fruit and/or leaf salad are suitable side dishes.
I like a cool, juicy-sweet watermelon best with this. But try it out, as always there are no limits to your imagination.
P. S. The dish is also suitable for a larger group. Simply double or triple the number and the party meal is ready.
