Malabar Paratha - South Indian flat bread

What a wonderful bread! Simple to prepare, it's a great side dish for any type of curry.

This simple flatbread is typical of South Indian cuisine. It is quickly prepared and tastes fresh from the pan with any curry.


Ingredients for 12 bread patties:

- 540 g wheat flour (550s)

- 100 g butter + some butter to spread

- 1 1/2 tsp salt

- 1/2 tsp sugar

- 220 ml


Preparation:

First melt the butter. Mix the flour with the salt and sugar and rub the melted butter between your fingers until crumbly. Gradually add the warm water and work everything quickly into a smooth dough.

The dough should be soft but not sticky. If not, add a little more flour.

Form the dough into a roll and let it rest in plastic wrap, at room temperature, for at least 1h. (The dough can also be prepared hours in advance).

For baking, divide the dough into 12 equal pieces and roll them out into snakes and then twist them into snails.

Heat a small, coated frying pan; in the meantime, roll out the dough snails with a rolling pin into circles about 18 cm in size and place them one by one in the hot pan. Using a spatula, turn several times and press into the pan. As soon as the patties start to brown, place them on a plate and brush with a little butter. Repeat until all the breads have been baked.




Stack the finished loaves on top of each other and always butter the top side.


Serve the finished bread patties hot. If you do not bake all the bread right away, wrap the remaining dough in foil again and process it at a later time. Once the breads have cooled, they become firm and no longer taste quite as good as freshly baked.
