Super moist and fruity cake that is quickly mixed and baked to welcome any surprise guest.
It's that time again, late summer is arriving in gardens and fields.
Even though the end of summer is approaching, I am delighted with the fruit and vegetable harvest. Franconian plums, the first apples and pears and also the versatile and extremely aromatic mirabelle plum (yellow, small plums).
They are excellent for baking and preserving, as jam or even savoury as various chutneys.
Today I present a baking recipe that makes a delicious cake with little effort.
Ingredients for the dough (square cake tin 20x20 cm):
- 170 gr flour
- 1 tsp baking powder
- 75 gr butter, melted
- 120 gr cream cheese
- 3 eggs size L
- 220 gr sugar
- 1/2 tsp ground vanilla
- pinch of salt
- 500 gr ripe mirabelles
Preparation:
First prepare the mirabelles: wash them thoroughly and then cut them in half and remove the seeds. The riper the fruit, the easier it is to remove the stone.
Now preheat the oven to 170 degrees Celsius and start the batter.
Melt the butter (be careful not to let it boil) and beat the eggs with the sugar until they form a light, fluffy mixture.
Then stir the cream cheese into the egg and sugar mixture. When everything is well combined, add the butter and vanilla and continue to stir. Finally, mix in the flour, baking powder and pinch of salt and stir everything together to form a fluffy dough.
Line a rectangular, square or round springform pan with baking paper and spread the batter evenly in it.
Finally, spread the mirabelle plum halves on the dough and bake for approx. 40-45 min until golden brown.
The cake is delicious both warm and cold - of course it goes well with a nice dollop of cream.
You can also bake the cake with ripe plums or apricots.
